So - the way I got around this was by converting my audiobooks into MP3s (using OpenAudible) and then, transferring (through dragging and dropping) them into the Music Mac app.
In the Books app on your Mac, click Library in the toolbar, then click Audiobooks in the sidebar. Browse or search for an audiobook, then double-click the audiobook you want to listen to. When you start listening, the audiobook player appears in the lower-left corner. To control playback, do any of the following in the audiobook player. If you have previously installed the Audiobook Manager, please search all programs or apps on Windows or Applications on a Mac for Audiobook Manager. Once it is open, choose 'Refresh' from the upper right hand corner and the new title should then appear. Hi Guys, I was listening to an Audio book on my way home yesterday (iOS 6 GM). Restored my phone when the Offcial came out and left it at that. Went to listen to the audio book this morning and the option has been taken away in the Music App. Have I missed something? Unfortunately, Audible has not provided a macOS app on the store and to make it even worse there is not even an official Audible app for Mac like you get in Windows. But fret not, you can still listen to Audible on Mac – either by using the official integration with iTunes or by sideloading the Audible Android app on your Mac. Use your smartphone, tablet, Amazon device or computer to listen to Audible audiobooks.
OpenAudible takes a second to figure out, and honestly, it's easier to drag and drop your audiobook files straight into it, rather than attempting to connect your Audible account. When you do this, however, it creates a duplicate of your original audiobook formatted file in the OpenAudible folder, which temporarily takes up space. You can then set OpenAudible to automatically convert your files to MP3s..which creates a THIRD file (this time, in MP3 format), which you then drag and drop into the Music app (creating a FOURTH file).
After doing this, you can, then, delete the original audiobook file (in the iBooks library), the second file in the OpenAudible library, and the third file (the MP3 conversion) in the OpenAudible MP3 folder, because Music will automatically create a copy in its library.

But, this is, sadly, probably the most convenient way to place AUDIO files into an app (and library) that is meant to play AUDIO files.

Books was never designed to serve as a media player and, as such, lacks a lot of the functionality that was present in iTunes. By converting your audiobooks into MP3s, you've got a lot more versatility - you can organize them into playlists (which was what I have done), modify their information under the 'Get Info' right-click option (which allows you to change the volume output and EQ settings), and edit author/artist names to better organize your collection.
When I first upgraded to Catalina, of all the various changes, the shunting of my meticulously curated audiobook playlists into the virtually worthless Books app sent me into a fiery rage (from which my cats are still shaken).

Transferring audiobooks

- Connect your iPod to your computer using a USB cable.
- Open iTunes (if it doesn't open automatically).
- In iTunes, turn on the Manually manage music setting (or enable disk use if you're using an iPod shuffle). This is a one-time step that is required to transfer audiobooks to your iPod from OverDrive for Mac.
- Open OverDrive for Mac.
- Select an audiobook, then click the Transfer button.
- When the transfer wizard opens, click Next so the program can detect your iPod.
Note: If you receive an error that says 'No portable players could be found..,' make sure you enable disk use in iTunes before trying to transfer. - When your iPod is detected, make sure it's selected under 'Player.' Select the part(s) you want to transfer and click Next.
- When the transfer is complete, click Finish to close the transfer wizard.
Where to find transferred audiobooks on your iPod
By default, transferred audiobooks are listed under 'Playlists' or 'Music.'
